Just last week, I participated in Philips Malaysia's Indulge in Chinese New Year Cooking Workshop. It was jointly hosted by Feminine Magazine with Chef Amy Beh present as well to demonstrate some awesome cooking using the Philips Airfryer with new TurboStar technology. It was a competition of sorts, and I'm proud to say my team won one of the three winner spots! Read on below.

Rich in tradition, family gatherings and good food, Chinese New Year is something many Malaysians look forward to every year. As many prepare to welcome the Year of the Rooster, it is time to fill the dining table with traditional Chinese New Year dishes to usher in more “fatt” with less fat with the help of Philips.

A fun event indeed

As significant as each dish is, it is also important to remember that cooking methods have health consequences. For example, consuming too much oily fried food is bad for the heart. This Chinese New Year, Philips Malaysia is collaborating with celebrity Chef Amy Beh and Feminine magazine to introduce the healthier versions of several familiar traditional dishes made using the Philips Airfryer with new TurboStar technology.

Deciphering the meanings of the dishes at the annual Chinese New Year dinner is like a treasure hunt. Each individual dish is steeped in tradition and is a homonym for a particular wish for the year to come. Among the must-have dishes at the table are fish to signify abundance, spring rolls and dumplings to represent wealth, tang yuan also known as sweet rice balls for family togetherness, and oranges, tangerines and pomelos for fullness and wealth .

Let the competition BEGIN!

Ten groups of three person each compete in the competition, all aiming to win themselves a Philips Airfryer equipped with the new TurboStar technology. First Chef Amy Beh demonstrated to us how to prepare the three dishes, namely the Tong Kwai Flavour Roasted Pork, a fish dish, and lastly assam prawns. Interesting indeed, after the demo, we were on our own!

Recipe for making that perfect Tong Kwai Flavour Roasted Pork using Philips Airfryer

Main
* Pork belly with skin (550 g)
* Water (1 liter)

Marinade (B) – To combine
* Oyster sauce (1 tbsp)
* Chinese five spices powder (1 tbsp)
* Pepper (1 tsp)
* Salt (1 tbsp)
* Chinese Angelica Powder – Tong Kwai Fen (8 g)

Marinade (C) – To rub on (for pork skin)
* Organic apple cider vinegar (1 tbsp)
* Salt (1 tsp)

Method
1. Place the pork belly, skin side up, into a pot of boiling water and simmer for 5-6 minutes. Turn off the heat and leave the pork to soak for 6-8 minutes in the pot to allow the shape of the meat to become firm.
2. Remove and pat dry with kitchen paper towels.
3. Prick the skin with a sharp skewer all over to enable the skin to blister evenly and thoroughly during roasting.
4. Score or cut small, uniform gashes in the surface of the meat side and rub combined marinade (B) over the meat and sides.
5. Turn meat over and rub organic apple cider vinegar followed by salt onto the skin. Wipe the skin with kitchen paper towels to remove any excess water or liquid.
6. Place prepared pork piece in a plastic container. Leave the skin side up without covering the container. Keep in the refrigerator overnight to dry the skin.
7. Set the pork belly onto the PHILIPS Airfryer TurboStar basket and grill at a temperature of 180°C. Roast for 40-45 minutes or till the skin is evenly blistered and crackling.
8. Remove roast pork from basket. Cut into bite-sized pieces and serve at once.

“Chinese New Year is a time for families and friends to gather and spend quality time with each other, while wishing each other prosperity and a good year ahead. The annual Chinese New Year reunion dinner with its menu of traditional Chinese dishes is especially significant for all generations of the family. However, those that are health conscious may be concerned that traditional Chinese dishes are often saturated in oil and unhealthy fats,” said Muhammad Ali Jaleel, Chief Executive Officer of Philips Group of Companies in Malaysia.
