Prepared by the talented Chef Chan Yok Kong, who was born and raised in a culinary family in Macao, various popular Macao dishes were laid out for our enjoyment. Chef Kong whipped up numerous Macanese cuisine, such as Chef Kong’s Specialty Curry Crab and Macanese-Style Roasted African Chicken. Yummy stuff really.

Chef Chan Yok Kong

A short background knowledge is in order. Starting his career at the age of 13, Chef Kong today holds 40 years of experience in Portuguese cuisine. He gained culinary skills from his father at the Former Macau Military Camp in Coloane, where he started learning how to prepare Portuguese dishes with authentic taste and flavor. He then started his career at the Portuguese restaurant in Hyatt Regency Macau and had since been with the restaurant for over 19 years.

Chef Kong then moved to work in Portugal, Spain, Southeast Asia, Hong Kong and mainland China. He now brings the culinary skills from these different countries to Gosto at Galaxy Macau. Some of his creation includes the Curry Crab, Macanese Style Roasted African Chicken and Macanese Style Tamarind Duck.

It was a myriad of tempting flavours, from poultry dishes, to seafood, salad, and even the very interesting Bacalhau Ball. ‘The Macao Exchange’ is part of the dinner buffet, differentiated by the colour of the dishes tag. This means you have a lot more to choose from when dining. Dessert is good too, check below on some of the Macanese dessert.
