"Not only is she a culinary expert, Chef Debbie Teoh is also a foodie, author, food stylist, ambassador for the Nyonya cuisine and culture, and once again, at Chatz Brasserie as its guest chef. Among the numerous cookbooks she has authored are "Underwraps" and "Asian Titbits", "Penang Food" guide and cookbook, "Nyonya Flavours" as well as "Authentic Nyonya Tastes". On a monthly basis, Debbie also contributes to magazines like "Oriental Cuisine" by Nanyang Press and "Flavours" by Star Publications. She is also a Nyonya Food Consultant for Tourism Malaysia."

Braving the after-work jam that evening, I reached Chatz Brasserie Parkroyal Kuala Lumpur just in time to dig into some of the delicious Nyonya dishes that Chef Debbie Teoh had whipped up for us. The Nyonya cuisine we had that evening were just a portion of the array of dishes to be served when the actual buffet starts this 11th May 2012. Aptly named "A Touch of Nyonya Influence", check out some of the food we had that wonderful evening.

Itek Tim
#1 Itek Tim

A hot bowl of soup is always good to begin a meal with, and the savoury Itek Tim consisting of duck meat with salted mustard vegetables hit just the right chord. I loved how the duck essense gave out a rich flavour to the soup. In fact it reminded me so much of my mother's home made soup.

Nasi Ulam
#3 Nasi Ulam

I wasn't a huge fan of terungs, but from the little that I tasted, it was rather good. The Nasi Ulam that came next was really aromatic with its mixture of sliced turmeric root, lemongrass, kaffir lime leaf, turmeric leaf, cekur leaf and torch ginger flower. Throw in a few finely sliced chilli and we had a taste that would certainly spice up the taste buds.

Gulai Tumis Ikan Pari

Ayam Buah Keluak
#5 Ayam Buah Keluak

The next two dishes were curry dishes, namely the Gulai Tumis Ikan Pari and the Ayam Buah Keluak. We had generous amounts of stingray fishes prepared in thick curry gravy which went really well with the rice. The Ayam Buah Keluak however was indeed a unique dish, as we were educated on the process of preparing these Buah Keluak which were actually Indonesian black nuts. These nuts had to undergo a 2 day process of getting it ready, and tasted similar to the black beans we usually have with daced canned fish.

Lemak Nenas Ikan Sepat
#6 Lemak Nenas Ikan Sepat

Another savoury curry dish, the Lemak Nenas Ikan Sepat had this really creamy santan taste to it. The salted fish gave this dish the extra flavour. We were then treated to a basket of the Nyonya Ulam Platter, as well as some sweet Nyonya Kueh. We were really privilaged to have the chance to dine together with the pretty Chef Debbie Teoh herself throughout the night.
